Meatloaf Muffins

I saw different versions of this recipe on lots of people's lists last week, so I thought I would give them a try this week. They were very tasty and a nice alternative to normal meatloaf.


1 lb lean ground beef (93/7)
1 box Stove Top Lower Sodium Chicken stuffing mix
1 cup water
2 egg whites
1 medium onion, diced
1 T A1 sauce


Mix all ingredients together and divide into 12 muffin cups that have been sprayed with non-stick cooking spray. Bake at 350 degrees for 35-40 minutes.

Makes 6 servings of two muffins per serving
